How to Extract Apple Juice?

Apple Juice Production Process

Apple juice is mainly divided into two types: clear juice and cloudy juice. Their process flows are similar, with differences only in key steps. The diagram below shows a typical production line flow:

Cloudy Apple Juice:

After pasteurization, it undergoes homogenization to refine pulp particles, prevent sedimentation, and maintain a cloudy state.

Clear Apple Juice:

After pasteurization, it undergoes enzymatic clarification and filtration to remove pectin and suspended solids, resulting in a clear and transparent juice.

Fruit Bubble Washing Machine

Thoroughly clean the apple surface, removing sediment and pesticide residues to ensure hygiene and safety.

A high-pressure fan and water pump generate strong bubbles and water flow, causing apples to tumble and rub against each other in the water for efficient cleaning. An overhead spray device performs a final rinse.

Spiral Crusher and Apple Juice Extractor

Structure: Hopper, crushing device, spiral main shaft, filter screen, juice collection port, pomace discharge port, pressure adjustment cone, etc.

Apples enter the hopper and are first crushed by high-speed rotating blades against a bottom blade into 2-5 mm particles. These particles then fall directly into the spiral juice extraction system. The spiral shaft's root diameter gradually increases, and the screw pitch decreases towards the pomace outlet. This reduces the conveying volume, creating strong squeezing pressure that forces out the juice. The juice flows through the filter screen into the collector, while the pomace is discharged through the gap between the adjustment cone and the spiral end.

Apple Juice Pasteurization/Sterilization Equipment

Kills microorganisms and enzymes to ensure the safety of apple juice. Tubular sterilizers work well for cloudy apple juice with pulp, while plate UHT sterilizers are ideal for clear apple juice. Standard process uses 85℃ for sterilization, then cools to 65℃ for filling.

Homogenizer (for Cloudy Apple Juice)

Breaks down apple pulp particles under 100-120 kg/cm² pressure to create a stable, uniform texture and prevent separation. Vacuum degassing before this step helps preserve the apple's natural color and nutrients.

Clarification & Filtration Equipment (for Clear Apple Juice)

Removes solids to produce transparent apple juice. Enzymatic clarification uses pectinase and gelatin at 34-40℃ for 30-60 minutes to break down apple pectin. Then, filtration (diatomaceous earth or ultrafiltration) clears the liquid.

Apple Juice Blending Tank

Adjusts sugar and acid levels for optimal apple juice taste&mdash- typically 12% sugar and 0.4% acidity. Made of 304 stainless steel with an agitator.

 

Vacuum Degasser (Optional)

Removes oxygen from apple juice to prevent oxidation, preserving fresh apple color and extending shelf life.

 

Apple Juice Filling Machine

Supports PET bottles, metal cans, or aseptic bags for apple juice. Juice must stay above 70℃ during filling for proper sealing.
